Apple Spice Dried Plum Griddlecakes

Ingredients17.6 oz all-purpose flour
4.25 oz whole wheat flour
5.7 oz unprocessed bran
1 oz sugar
2 T baking soda
1 T salt
64 oz buttermilk
6 oz eggs lightly beaten
4 oz butter, melted
24 oz chopped dried plums*
1 X Recipe Apple-Spice Topping (recipe follows)
*Canned dried plums may be substituted for pitted dried plums. Drain liquid and pat dry with a paper towel.
DirectionsIn a mixing bowl, combine flours, bran, sugar, baking soda and salt; mix well. Set aside.
In a mixing bowl, whisk together buttermilk, eggs and butter. Add to dry ingredients, mixing just until dry ingredients are moistened. Stir in dried plums; let stand 5 minutes.
Heat lightly greased griddle or non-skillet over medium heat until hot. For each pancake, pour scant 1/4 cup batter onto hot griddle. Turn pancakes when tops are covered with bubbles and edges look cooked. Cook second sides until golden brown.
Serve warm with Apple Spice Topping.
APPLE SPICE TOPPING: In small saucepan cook and stir 3 cups unsweetened applesauce, 6 ounces finely chopped pitted dried plums and 1 1/2 teaspoon ground cinnamon over medium heat 1 to 2 minutes or until warm. (For 25 Servings. Double for 50 servings, 4X for 100 servings)
