California Harvest Stuffing

Ingredients6 oz butter 27 oz chopped dried plums* 12 oz chopped onion 12 oz fresh turkey sausage or reduced-fat pork sausage (casings removed), cooked and crumbled 5 1/2 oz chopped pecans, toasted 3/4 cup chopped fresh parsley 3 tsp dried thyme leaves 3 tsp teaspoon ground sage 25 oz cups chicken broth 6 oz cup dry sherry 18 oz cornbread stuffing mix, prepared with seasoning packet *Canned dried plums may be substituted for pitted dried plums. Drain liquid and pat dry with a paper towel.
DirectionsIn a saucepan or steam jacketed kettle, heat butter over medium-high heat until melted. Add dried plums, onion, sausage, pecans, parsley and herbs; cook and stir 5 minutes or until onion is translucent. Add broth and sherry; bring to a boil. Reduce heat; cover and simmer 5 minutes. Stir in stuffing mix (with seasoning packet) until moistened. Cover; let stand 5 minutes before serving. Tip: -To toast pecans, arrange in even layer on baking sheet. Bake in 350°F oven 8 to 10 minutes or until lightly browned.
