Citrus Rice Pilaf Salad

Prep Time  10 minutes Cook Time  25 minutes Serves  25

Ingredients

6-6 oz bx rice pilaf mix
24 oz orange juice
36 oz halved pitted dried plums*
3 oz sliced green onions
12 oz sliced radishes
3 oz white wine vinegar
2 T finely grated orange peel
1 tsp hot pepper sauce
25 each lettuce leaves
As needed Orange slices (optional)

*Canned dried plums may be substituted for pitted dried plums. Drain liquid and pat dry with a paper towel.


Directions

Prepare rice mix according to package directions, per box substitute 4 oz orange juice for 4 oz of the water; remove from heat. Stir in dried plums; cool to room temperature. Mix in remaining ingredients except lettuce. To serve, line plates with lettuce. Spoon equal amounts of rice mixture over each; garnish with orange slices, if desired.
