Cornmeal Flapjacks With Dried Plums

Prep Time  15 minutes Cook Time  10 minutes Serves  25

Ingredients

19 oz yellow cornmeal
9 oz all-purpose flour
4 oz sugar
2 T baking powder
2 tsp salt
32 oz milk
8 each eggs
 4 oz butter, melted
20 oz chopped dried plums*
Maple syrup (optional)

 *Canned dried plums may be substituted for pitted dried plums. Drain liquid and pat dry with a paper towel.


Directions

In a mixing bowl, combine cornmeal, flour, sugar, baking powder and salt; mix well. Set aside.

In small bowl, whisk together milk, eggs and butter. Add to dry ingredients, mixing just until dry ingredients are moistened. Stir in dried plums; let stand 5 minutes. Heat lightly greased griddle or skillet over medium heat until hot. For each pancake, pour scant 1/4 cup batter onto hot griddle. Turn pancakes when tops are covered with bubbles and edges look cooked. Cook second sides until golden brown. Serve warm with maple syrup, if desired.
