Dried Plum Pecan Bread

Ingredients

No-stick cooking spray
16 oz pitted dried plums*
12 oz prune juice
6 oz water
1 ½ T grated orange peel
9 oz toasted wheat germ
10 ½ oz whole wheat flour
4 ½ oz all-purpose flour
10 ½ oz packed brown sugar
2 tsp baking powder
2 tsp baking soda
2 tsp salt
4 each egg whites
8 ½ oz chopped pecans

*Canned dried plums may be substituted for pitted dried plums. Drain liquid and pat dry with a paper towel.

Directions

Heat oven to 350ºF.

Lightly coat 8 1/2 x 4 1/2-inch loaf pan with cooking spray; set aside. In small saucepan, bring dried plums, prune juice and water to a boil. Transfer dried plum mixture to food processor or blender; process until smooth. Stir in orange peel and set aside. In large bowl, combine wheat germ, flours, brown sugar, baking powder, baking soda and salt; stir to blend thoroughly. Mix in dried plum mixture, egg whites and pecans until thoroughly blended. Spread batter in pan; bake in center of oven about 50 minutes or until wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Turn onto rack to cool completely.
