Dried Plum Waldorf Salad
24 oz reduced-fat mayonnaise
6 oz freshly squeezed orange juice
38 oz chopped red apples
32 oz cubed smoked turkey
24 oz chopped dried plums*
12 oz chopped celery
8 1/2 oz chopped walnuts, toasted
Red or green lettuce leaves (optional)
*Canned dried plums may be substituted for pitted dried plums. Drain liquid and pat dry with a paper towel.
In medium bowl, combine mayonnaise and orange juice; add apples, turkey, dried plums, celery and walnuts, tossing to coat. Chill in refrigerator; serve on lettuce, if desired.
Tip: -To toast walnuts, arrange in even layer on baking sheet.
Bake in 350°F oven 8 to 10 minutes or until lightly browned.
