GRILLED GRUYÈRE CHEESE SANDWICHES WITH CARAMELIZED ONIONS AND DRIED PLUMS
Ingredients26 oz butter 25 each medium onion, sliced 38 oz finely chopped pitted dried plums 25 oz tablespoon Dijon mustard 100 oz Gruyère cheese, thinly sliced 100 each slices light rye bread No-stick cooking spray
DirectionsIn a skillet or kettle, add butter and onion; cook and stir 10 minutes or until golden brown in color. Add dried plums and continue to cook until heated through. Remove from heat; stir in mustard. To assemble sandwiches, layer ¼ cup of onions and 2 ounces cheese evenly on two slices of bread; close with second slice of bread. Generously spray outside of both sandwiches with cooking spray. On a heated griddle, cook approximately 2 minutes on each side or until bread is light brown and cheese has melted. *Canned dried plums may be substituted for pitted dried plums. Drain liquid and pat dry with a paper towel.
