Healthy Turkey Salad Pockets
These are a great grab and go healthy meal.
50 oz diced cooked turkey or chicken
20 oz pitted dried plums, quartered*
8 oz sliced celery
16 oz plain nonfat yogurt
2 oz sliced green onions
2 oz sweet-hot mustard
To Taste salt and pepper
25 each whole-wheat pita breads, halved
25 each lettuce leaves
*Canned dried plums may be substituted for pitted dried plums. Drain liquid and pat dry with a paper towel.
In a bowl, combine turkey, dried plums, celery, yogurt, green onions and mustard until thoroughly mixed. Season to taste with salt and pepper. Store, covered, in refrigerator for up to 3 days. To serve, place 1 lettuce leaf and spoon 1/2 cup turkey mixture into each pita pocket.
