LAYERED SWEET POTATO AND DRIED PLUM CASSEROLE

Cook Time  1-1/2 Hours Serves  50

Ingredients

No-stick cooking spray 32 oz packed brown sugar 8 tsp grated orange zest 4 tsp ground cinnamon 2 tsp ground nutmeg 1 tsp ground cloves 8 lb sweet potatoes, peeled and sliced 1/4 inch thick 8 each Granny Smith apple, peeled and sliced 1/4 inch thick 48 oz quartered pitted dried plums 8 oz butter, cut up

Directions

Heat oven to 350ºF. Lightly spray a casserole dish(s) with cooking spray; set aside. In a bowl, combine brown sugar, orange zest, cinnamon, nutmeg and cloves; set aside. Layer divided portions among the baking dishes to form two layers each of sweet potato slices, green apple slices, dried plums and brown sugar mixture; top with the divided butter. Cover dish (s) with aluminum foil. Bake 1 1/2 hours or until potatoes are tender. Let stand 10 to 15 minutes before serving.
