Plum Bread Pudding
Prep Time - Serves 25
Ingredients1 lb. white bread, day old, 1" cubes
10 ea. eggs
30 oz. granulated white sugar
48 oz. whole milk
2 tsp. vanilla extract
20 oz. pineapple, canned, chopped, drained
10 oz. canned wet pack dried plums, drained and quartered*
*Pitted dried plums maybe substituted for canned dried plums.
DirectionsWhisk together eggs, sugar, and vanilla, until sugar is dissolved. Combine bread, plums, and pineapple. Combine both ingredients and let set for 10 minutes Grease or spray 2" baking containers and add bread pudding mixture. Bake covered with foil at 325 degrees F for 1 hour and 15 minutes. Remove foil for last 10 minutes to brown. Serve with whipped cream or plumberry compote.
