Plum Savory Brown Sauce

Ingredients4 oz Flour
4 oz. Butter, margarine, or vegetable oil
32 oz. Beef Broth, low sodium
12 oz. Canned wet pack Dried Plums, drained and quartered*
1 oz. Tomato Paste
*Pitted dried plums maybe substituted for canned dried plums.
DirectionsCombine flour and fat to form a roux and cook until it turns a peanut butter color Slowly pour in the cold beef broth and whisk vigorously to remove lumps Bring to a simmer and add the tomato paste and plums Simmer for 30-45 minutes on a low heat until thickened. To reduce the fat and calories in this recipe half the amount of cornstarch dissolved in the beef broth will thicken sufficiently.
