Plumberry Granita

Prep Time  10 minutes Serves  25

Ingredients

12 oz pitted dried plums*
6 oz hot water
64 oz white grape juice
20 oz frozen sweetened raspberries, partially thawed
2 oz lemon juice

*Canned dried plums may be substituted for pitted dried plums. Drain liquid and pat dry with a paper towel.

Directions

In blender container, combine dried plums and water; process until finely chopped. Add grape juice, raspberries and lemon juice; process until blended. Pour into shallow pan; freeze 2 hours, stirring every 30 minutes. Freeze an additional 1 to 2 hours or until firm, but not solid. To serve, let stand at room temperature to soften slightly; stir or break up, as necessary, to form coarse texture.

Tip: -Granitas should be served slightly thawed. Leftover granita may be refrozen in covered container; let stand and break up before serving.
