Powerhouse Dried Plum Bars

Ingredients

Makes 2 dozen bars
18 oz coarsely chopped dried plums*
6 oz apricot jam
No-stick cooking spray
6 oz oats (old fashioned or quick, uncooked)
12 oz brown sugar
8 1/2 oz all-purpose flour
1 tsp ground cinnamon
1 tsp salt
1 tsp baking soda
4 oz egg
3 oz melted butter or margarine
Powdered sugar (optional)

*Dry pack canned dried plums may be substituted for pitted dried plums. Wet pack canned dried plums are not recommended for this recipe.

Directions

In a bowl, combine dried plums and apricot jam; set aside. Lightly spray baking pans with no-stick cooking spray. In a bowl, combine oats, sugar, flour, cinnamon, salt and soda; mix well. Lightly beat together egg and butter; add to oats mixture, mixing until crumbly. Press ½ of mixture into bottom of prepared pan. Spread dried plum mixture over oats; sprinkle remaining oat mixture over top. Bake at 350°F oven 20 to 22 minutes or until deep golden brown. Cool in pan on wire rack. Sprinkle with powdered sugar, if desired; cut into bars.
