Sauce Plum Wonderful

Prep Time  10 minutes Cook Time  15 minutes Serves  25

Ingredients

2 oz vegetable oil
4 oz finely chopped onion
1 oz grated fresh ginger
4 each cloves garlic, finely chopped
16 oz prune juice
10 oz orange marmalade
4 oz cider vinegar
To Taste crushed red pepper
To Taste pepper
2 oz cornstarch
4 oz water

Directions

In a saucepan, heat oil over medium-high heat until hot. Add onion, ginger and garlic; cook and stir 5 to 7 minutes or until onion is golden brown. Add prune juice, marmalade, vinegar, crushed red pepper and pepper; bring to a boil, stirring occasionally. Boil 1 minute. In small bowl, dissolve cornstarch in water; stir into saucepan. Cook and stir until thickened and clear. Remove from heat; cool 20 minutes, uncovered. Store, covered, in refrigerator for up to 1 month. Use as a basting sauce, glaze and dipping sauce for barbecued or broiled meats and poultry, if desired.
