Southwestern Dried Plum Relish

Prep Time  10 minutes Serves  25

Ingredients

18 oz chopped dried plums*
1 1/2 cup canned green chiles
2 oz sliced green onions
4 oz chopped walnuts, toasted
5 oz balsamic vinegar
5 oz medium-dry port
1 tsp crushed red pepper

 *Canned dried plums may be substituted for pitted dried plums. Drain liquid and pat dry with a paper towel.

Directions

In a bowl, combine all ingredients. Store, covered, in refrigerator for up to 1 week. Serve with grilled chicken, pork chops or fish, if desired. Tip: -To toast walnuts, arrange in even layer on baking sheet. Bake in 350°F oven 5 to 7 minutes or until golden brown.
