Southwestern Plum Salad
20 oz. Jicama, fine julienne (Apples or Pears can be substituted)
12 oz. Carrots, fine julienne
8 oz. Canned wet pack Dried Plums, drained and quartered*
1/2 bunch Cilantro, finely chopped
4 oz. Lime juice, fresh squeezed
4 oz. Prune juice
1/2 cup reduced calorie Mayonnaise
1 ea Red Pepper, julienne
*Pitted dried plums maybe substituted for canned dried plums.
Place all the prepared vegetables in a large bowl. In a separate bowl, combine the lime juice, prune juice, mayonnaise, and cilantro, mix well to combine. Combine the vegetables with the dressing and mix well. Serve as a side salad or an entree salad on a bed of greens.
