Diced & Bits
Diced dried plums are pitted and cut into 1/4" - 1/2" pieces by dicing equipment. They go well in most baked products with little or no modification of the formula. Unlike raisins, diced dried plums need not be presoaked prior to use.
Diced dried plums should comprise up to 50% of the total weight of the formula. A variety of interchangeable coatings is used to make the diced dried plums free-flowing. These may be edible vegetable oils, or approved diglycerides or monoglycerides or mixtures thereof, and dry coatings such as dextrose, cornstarch, or rice powder. Currently, dextrose and vegetable oils are being used.

Dried plum bits are prepared by dicing from extruded paste. Bits contain no preservatives and are free of pit fragments. Low-cost bits can be used to extend the flavor and nutrition of other higher-cost ingredients, such as dried tree fruits, nuts and cereals. Available in 25-pound containers.
