Reduced-Fat Dried Plum, Tomato, & Feta Salad

Enjoy this tasty lower-in-fat combo of dried plums, tomatoes and feta cheese on its own or with salad greens.

Ingredients

2 pints cherry tomatoes, each cut in half
1/4 cup crumbled feta cheese
1/2 cup thinly sliced red onion
1/2 cup (about 3 ounces) finely chopped dried plums
2 tablespoons olive oil
2 tablespoons hot water
1 tablespoon red wine vinegar
1/2 teaspoon crushed garlic
Torn salad greens (optional)


Directions

In medium bowl, combine tomatoes, feta cheese, onion and dried plums; set aside. In small bowl, whisk together oil, hot water, vinegar and garlic. Add to tomato mixture; toss lightly to coat. Serve with salad greens, if desired.
