Roasted Baby Carrots with Dried Plums
Dried plums and tender baby carrots team up in a vegetable dish that's great with grilled pork chops, roast chicken, or braised beef.
2 tablespoons honey
1 tablespoon lemon juice
1/2 teaspoon dried thyme leaves
1 pound baby carrots
1 tablespoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup (about 3 ounces) quartered dried plums
Heat oven to 450°F. In small bowl, combine honey, lemon juice and thyme; set aside. On foil-lined baking sheet, toss carrots with oil, salt and pepper. Bake 20 to 25 minutes or until tender, stirring occasionally. Add honey mixture and dried plums; toss well. Bake an additional 1 to 2 minutes or until heated through.
