Balsamic Roasted Beet And Dried Plum Salad
Ingredients
60 oz small yellow or red beets ,trimmed
16 oz water
10 oz balsamic vinegar
7.5 oz olive oil
5 each clove garlic, finely chopped
3 T granulated sugar
2 tsp salt
1 tsp pepper
28 oz mixed salad greens
50 each pitted dried plums, halved*
50 oz crumbled blue cheese
4.5 oz unsalted shelled pistachios
*Canned dried plums may be substituted for pitted dried plums. Drain liquid and pat dry with a paper towel.
Directions
Heat oven to 375ºF. Place beets and water in a roasting pan. Cover tightly with aluminum foil; bake 45 to 60 minutes or until tender. Cool slightly; peel skin off beets. Cut each beet into 8 wedges; set aside. In a bowl, combine vinegar, oil, garlic, sugar, salt and pepper. In large bowl, combine mixed greens, dried plums and beets. Drizzle with vinaigrette; toss to coat. Arrange salad evenly onto salad plates. Top each with cheese and pistachios.
