Directions

  1. Temper trimmings to 24° - 28° F, analyze for fat and moisture content, formulate meat blends to specific fat endpoint.
  2. Grind pork lean through 1/4" to 3/8" plate.
  3. Grind beef fat trim through 1/2" plate.
  4. Combine pork and beef, dried plum fruit blend, ice and seasonings in a mixer with ingredients and blend for 7-10 minutes.
  5. Regrind through 1/8" to 1/4" plate.
  6. Or, place pork in bowl chopper, added 1/2 ice and 1/2 ingredients and chop until particle size is similar to 1/4" grind; keep temperature below 45° F. Place beef trim in chopper, add remainder of ice and ingredients, and chop until particle size is ~1/8".
  7. Vacuum stuff into natural hog casings ~32mm diameter (or 4 to 6 impermeable water cook casings)
  8. Thermal process and smoke until final internal temperature reaches 156° - 160° F.
  9. Chill 10 to 15 minutes under a cold shower to <100° F internal temperature.
  10. Hold at chill room temperature (50° F) for 30 minutes to dry before placing in cooler (< 40° F).
* 4 oz. commercial cure (Modern Cure® or Prague Cure®) per 100 pounds of meat is equivalent to 1/4 oz NaNO2
