Diced dried plums are pitted and cut into ¼ - ½-inch pieces by dicing equipment. A variety of interchangeable coatings are used to make them free-flowing. Dried plum bits are prepared by dicing from extruded dried plum paste. Bits contain no preservatives and are free of pit fragments. More

Dried plum paste is prepared from dried plums with an average of 25 percent moisture content. Composed of dried plums and possibly added sweeteners, dried plum puree is available as a low-moisture puree with 20-25 percent moisture to a high-moisture puree with 60-70 percent moisture. More


Canned or bottled juice is prepared from a water extract of dried plums. Prune and fresh plum juice concentrate are viscous forms of juice, packed at a 70-degree Brix minimum. More


Dried plum powder is 100-percent whole dried plum solids ranging in moisture content of 2–4 percent moisture. Generally an anticaking agent, such as calcium stearate, is added in small amounts.
