What are Confetti Bites?

Our confetti bites are prunes that have been filled with a sweetened peanut butter taffy-like mixture and then rolled in sprinkles or powdered sugar. They’re a delicious after school snack or dessert!

Variations on confetti bites

Feel free to change up some of the ingredients and make this recipe your own. Peanut butter can be swapped out for almond or sun butter. Use different colored sprinkles to suit any ocassion. Imagine using green, red and white sprinkles for an adorable holiday treat. Red, white and blue sprinkles magically transform these candies into a patriotic snack. You get the picture. The only limit is your imagination.

Prunes aren’t just delicious, they’re good for you, too! Because prunes are naturally sweet, they are an obvious choice for a healthy sugar alternative. In addition to reducing (or eliminating) the need for refined sugar in your favorite recipes, prunes are a healthy powerhouse and provide many essential vitamins and minerals that will level up the nutritional value of any recipe! Prunes are low glycemic and loaded with fiber, polyphenols, boron, potassium, and Vitamin K which collectively can contribute to gut health, reduced inflammation, cancer prevention, blood sugar control, bone health, and reduced cholesterol!

Ingredients
 
 

  • 1 cup nonfat dry milk
  • 1/3 cup powdered sugar
  • 1/2 cup creamy peanut butter
  • 1/2 cup light corn syrup
  • 1/2 tsp vanilla extract
  • 12 California Prunes each cut in half
  • Colored candy sprinkles or additional powdered sugar optional

Instructions
 

  • In a medium bowl, combine dry milk and sugar; add peanut butter, corn syrup and vanilla, mixing to blend completely. The mixture will resemble stiff taffy.
  • Divide into 24 portions, about 2 teaspoons each. Form each piece of the peanut butter taffy into a ball and flatten slightly in the palm of your hand and then wrap around one California Prune half, covering completely.
  • Reshape into a ball and roll in candy sprinkles or powdered sugar.
  • Store in an airtight container.
