Dried Plum & Pistachio Chia Pudding

1/3 cup chia seeds  
 1 1/2 cup unsweetened almond milk or other non-dairy milk  
 1/2 cup chopped California Dried Plums, additional for topping  
 1/3  cup roasted pistachios roasted, additional for topping 
2  tablespoons hemp seeds  
 1 tablespoon unsweetened cacao nibs, additional for topping 
2 teaspoon ground cinnamon


Whisk together ingredients in large mixing bowl. Cover and chill in fridge for at least one hour or overnight.  Once mixture reaches a pudding-like consistency, remove from fridge and divide into 2 bowls or mason jars. Top with additional chopped dried plums, pistachios, and cacao nibs before serving.
