Dried Plum Chocolate Truffle Energy Bites

Ingredients

• 1 cup sunflower seeds
• ¾ cup gluten free oats 
• 1 cup California Dried Plums
• 1 cup maple syrup 
• 1 cup unsweetened cocoa powder, plus more for rolling 
• ⅓ cup dairy-free mini chocolate chips, plus more for rolling


Directions

Pulse the sunflower seeds and oats in the food processor until they are finely ground.  Add the California Dried Plums and pulse until they are finely chopped and incorporated. Add the maple syrup and cocoa powder and process until the mixture comes together into a thick dough. Scrape the mixture out into a bowl. Stir in the ⅓ cup of chocolate chips. Place some cocoa powder and some more chocolate chips into two separate small bowls. Line a cookie sheet with waxed paper. Roll the mixture into balls that are about one inch in diameter. Roll each ball in either the cocoa powder or mini chocolate chips. Place the balls on the lined cookie sheet. Let them chill in the refrigerator for at least one hour before eating. Store in the refrigerator.
