Dried Plum Perfect Muffins

3/4 cup all-purpose flour
• 3/4 cup whole wheat flour 
• 1 teaspoon baking powder 
• 3 tablespoons flax seed meal 
• 1/2 teaspoon baking soda 
• 1/4 teaspoon cinnamon
• 1/4 teaspoon salt 
• 3 medium-sized ripe mashed bananas
• 1/4 cup dark brown sugar 
• 1/4 cup canola oil 
• 1 teaspoon vanilla extract
• 1 egg 
• 3-4 shredded and chopped carrots
• 1 cup pitted and quartered California Dried Plums


Preheat the oven to 400 °F. Grease your muffin pan and set aside.  In a large bowl, whisk the two flours, baking powder, flax seed, baking soda, cinnamon, and salt. In a separate medium sized bowl, mix the bananas, brown sugar, oil, vanilla, and egg with a whisk or fork. Once mixed, stir in the carrots and the dried plums gently. Add this mixture to the flour mixture and fold until all ingredients are combined. Do not over mix.  Spoon the batter into the prepared muffin pan. Bake for about 23-25 minutes, or until toothpick inserted into the center of the muffin comes out clean. Remove the muffins from the oven, and serve warm.
