Madeleines aux Pruneaux (Prune Madeleine)

Ingredients

  • 60g whole egg
  • 15g egg yolk
  • 15g honey
  • 60g granulated sugar
  • 75g low-gluten flour
  • 1.7g baking powder
  • 15g almond flour
  • 50g prune puree
  • Walnuts to taste

Directions

Butter a silicone tray and dust with strong flour.

  1. Place the whole egg, egg yolk, and honey in a bowl and warm over hot water.
  2. Add the granulated sugar and mix in.
  3. Add the low-gluten flour, baking powder, and almond flour, sieving them first.
  4. 4Add the prune puree.

Baking
Pipe the mix into the tray and sprinkle with walnuts. Bake for approx. 15-20 minutes in a 160˚C oven.
