Sweet & Sour Sausage

Brown sugar and vinegar are the sweet and sour in this quick saute of sausage, apples and dried plums. It's a great change of pace from ham and eggs for a winter breakfast.

Ingredients

2 tablespoons olive oil
1 onion, coarsely chopped
1 pound turkey kielbasa, cut into 3/4-inch thick slices
2 tart apples, cut into 1/2-inch pieces
3/4 cup (about 4 1/2 ozs) pitted dried plums, cut into 1/2-inch pieces
3 tablespoons raspberry vinegar
1 tablespoon brown sugar


Directions

In large skillet, heat oil over medium heat. Add onion; cook 4 to 6 minutes or until soft, stirring occasionally. Add kielbasa, apples and dried plums. Cover; cook 4 to 6 minutes or until apples are almost tender, stirring occasionally. Stir in vinegar and brown sugar; cook an additional 5 minutes.
