Cauliflower Slaw

Lighten up your side dishes and watch as prune purée brings together all the elements of this cauliflower slaw without sacrificing taste.

Prep Time   20 min. Serves  8

Ingredients

1 head cauliflower, shredded
1 cup carrots, shredded 
¼ cup green onions, chopped
¼ cup red pepper, diced 
½ cup California Dried Plums, diced 

3 tablespoon white balsamic vinegar
2 tablespoon olive oil 
2 tablespoon California Dried Plum purée 
Salt, to taste
Pepper, to taste
½ teaspoon celery seed 
½ teaspoon tarragon


Directions

Combine vegetables and diced dried plums in a bowl.

For California Dried Plum purée: 

In food processor, process 1⅓ cups dried plums and 6 tablespoons hot water until puréed. 

In a separate bowl, mix vinegar, olive oil, dried plum purée, salt, pepper and spices. Pour over the vegetables. Mix well. Let marinate for about 1 hour before serving.
